For most of us, the long winter days make it easy to fall into a rut of calorie-laden comfort food. If you’ve set an intention toward health in the new year, spice things up with more vegetables, seasonings and healthy recipe hacks.
Here are a few seasonal and healthy recipe swaps from the Underground Eatery at Scentsy’s home office in Meridian, Idaho:
When you’re feeling snacky
We all have the occasional snack attack! In lieu of a sandwich, slice a bell pepper in half and take out the seeds. Fill the peppers with a smeared light cheese wedge (our chef recommends the Laughing Cow brand) and sprinkle “everything bagel” seasoning. Snack away, sans the guilt!
When you need something sweet
Sometimes a sweet tooth can take over the best laid meal plans. Scentsy’s chef recommends plain Greek yogurt (vegan options also work) sprinkled with 1 teaspoon of cinnamon and topped with your favorite fresh berries. Sprinkle a pinch of sugar or sweetener if the berries are too tart.
When it’s taco Tuesday
Tacos are one of the world’s favorite ways to fill the belly! And why not?! They’re spicy, delicious and affordable. Make them a bit healthier with this recipe for Turkey Taco Lettuce Wraps from the Scentsy kitchen:
- 2 tsp. olive oil
- ¾ cup chopped yellow onion
- 1 lb. ground turkey
- 1 packet taco seasoning
- Iceberg or butter lettuce, separated into leaves
Optional toppings:
- Diced fresh jalapeño
- Sliced avocado
- Diced tomato
- Sliced green onion
- Chopped fresh cilantro
- Light Sour Cream
- Guacamole
- Fresh lime wedges
Heat the oil in a large skillet. Sauté yellow onion until translucent. Add ground turkey to the skillet and cook, stirring until cooked through with no pink showing. Add taco seasoning and water as indicated on the package. Let simmer for 2-3 minutes. Scoop cooked turkey into lettuce leaves and top as desired.
