Dangerously Delicious Apple Pie
Crust
- 1 1/2 cups all-purpose flour
- ¼ teaspoon fine sea salt
- 10 tablespoons unsalted high-fat butter (cold and cut into cubes)
- 2-4 tablespoons ice water (as needed)
Filling
- ¼ cup granulated sugar
- ¼ cup packed brown sugar
- ⅓ cup all-purpose flour
- 1½ teaspoon allspice
- ⅛ teaspoon nutmeg
- ⅛ teaspoon cinnamon
- ⅓ cup sour cream
- 1 tablespoon fresh lemon juice
- 1 teaspoon vanilla
- 3 pounds tart apples (peeled, cored and thinly sliced)
Crumble topping
- 1 cup all-purpose flour
- ½ cup unsalted butter (cold and cut into cubes)
- ½ cup chopped walnuts (optional)
- ⅔ cup packed brown sugar
- ¼ teaspoon cinnamon
Preheat oven to 425° F.
Make the crust
Add flour and salt to the food processor and pulse a few times to combine well. Pulse in the cold butter until the mixture looks crumbly. Continue to pulse while slowly drizzling in ice water one tablespoon at a time, until the dough comes together. The dough should hold together when pressed but not be sticky. Gather the dough into a ball and flatten into a disc. Wrap tightly in plastic wrap and chill for at least 1 hour. On a lightly floured surface, roll out crust to ⅛-thick and carefully lay in pie dish. Crimp the edges. Refrigerate while you make the filling. Do not par bake.
Make the filling
Whisk together sugars, spices and flour. Stir in sour cream, lemon juice and vanilla until well combined. Fold in apples, making sure all apple slices are well coated. Add into prepared pie crust, mounding the filling in the center.
Make the topping
Combine flour, cinnamon and brown sugar in food processor and pulse until just combined. Add cold butter and pulse until just combined. Add nuts and pulse briefly. Sprinkle mixture over apples and gently press down.
Bake at 425° F for 15 minutes. Reduce heat to 350° F for 40 minutes (don’t open the oven door). Cover crust with foil if it’s getting too dark.
Let cool completely before serving. Serve with whipped cream or ice cream.
We’re in favor of eating desert first but try these other apple recipes to round out a wholesome meal.

Hearty apple, potato and sausage soup
- 2 tablespoons olive oil, divided
- 15 ounces smoked sausage, diced
- 1 medium yellow onion, diced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 4 cloves garlic, minced
- 1.5 pounds potatoes, diced
- 2 Granny Smith apples, diced
- 2 bay leaves
- ½ teaspoon chili powder
- ½ teaspoon garlic powder
- ½ teaspoon celery salt
- Salt and pepper to taste
- 2 tablespoons fresh parsley, minced
- 6 cups vegetable or chicken stock
- 1 (14 oz.) can coconut milk
Make the soup
In a large pot, heat one tablespoon olive oil over medium-high heat. Cook sausage until brown. Remove and set aside. Heat the remaining olive oil in the same pot and sauté the onion until just softened. Add garlic, carrots and celery and sauté for 3 minutes. Stir frequently.
Add the stock, coconut milk, potatoes, apples, chili powder, garlic powder, celery salt and bay leaves and stir to combine. Cook until soup reaches a simmer, then reduce heat to medium-low for 15 minutes, or the potatoes are tender.
Stir in the sausage and parsley and remove the bay leaves. Add salt and pepper to taste.

Savory apple tart
- 1 tablespoon unsalted butter
- 1 tablespoon olive oil
- 1 small yellow onion, sliced into rings
- ½ cup crème fraiche (can substitute ricotta cheese)
- 1 teaspoon Dijon mustard
- 1 cup shredded Gruyere
- 1 apple, cored and thinly sliced
- ½ tablespoon fresh thyme chopped, plus a bit more for garnish (or use whatever herb(s) you like)
- Salt and fresh ground pepper to taste
Make the crust
Use the same pie crust recipe above. Roll out the dough and press into a tart pan. Trim the excess and refrigerate for a half hour.
Preheat oven to 375° F. Place parchment paper inside the dough and fill with pie weights or dried beans. Bake for 20 minutes. Remove the parchment and weights and bake another 8 -10 minutes until the crust is golden brown. Cool on a wire rack.
Make the filling
Set oven temperature at 350° F.
In a large skillet on medium heat, melt butter with olive oil. Cook onion slices until slightly caramelized on both sides.
Whisk together crème fraîche and mustard, salt and pepper. Spread half in the bottom of the tart crust. Sprinkle with half the grated cheese and minced herbs. Layer the apple and onion slices. Sprinkle with the remaining cheese and herbs.
Bake for 15 minutes, until the cheese is fully melted. Serve warm and garnish with additional herbs.
