It’s a question for the ages: “What do I do with my Thanksgiving leftovers?” With so many choices, it’s not a simple question to answer. Thanksgiving tastes and traditions vary widely, but there are plenty of classic dishes that you’ll see at almost every table — like mashed potatoes and gravy, cranberry sauce and, of course, turkey. Here are a few easy, go-to recipes for these classic Thanksgiving leftovers:
Turkey and brie sandwich
Sliced turkey smothered in cranberry sauce between two halves of a fluffy dinner roll — it’s as classic as a traditional Thanksgiving dinner, and we’re willing to bet that you’ve made it at least once. But like many holiday traditions, it’s always fun to shake it up and try something new. Turn up your turkey sandwich to an 11 with a few simple additions.
First, balance out the sweet and tart cranberry and savory turkey with the tang of Dijon mustard. Next, top your turkey with your preferred greens. Spinach, arugula or butter lettuce are great places to start, but feel free to mix it up. Finish the sandwich with a thick slice of creamy brie, and dig in!
Tattie scones
Breakfast the day after Thanksgiving might be one of the most difficult to strategize. After all, how do you follow something so spectacular? Enter tattie scones. Tattie scones, sometimes called potato scones, are savory pan-fried scones made with mashed potatoes. It’s simple: Take your leftover mashed potatoes and add salt to taste and a bit of flour. Continue mixing in small amounts of flour until the mixture is slightly tacky, like dough. Portion into two-inch balls and flatten into half-inch thick circles. Slice each circle into quarters and fry them in a skillet with oil or butter until golden brown on each side. Serve with bacon, sausage and eggs, and plenty of that leftover gravy. Mix it up by adding sliced green onions or pan-fried shallots while forming the dough.
Thanksgiving casserole
When the fridge is filled to the brim with leftovers, and you need one recipe to rule them all, this dish is sure to please. Coming from the creative minds of Scentsy’s own Underground Eatery, this easy-to-make layered casserole combines all our Thanksgiving favorites into one dish.
Start with a layer of mashed potatoes on the bottom of an 8″ x 8″ casserole dish. Next, add a layer of turkey and leftover vegetables (carrots, green beans and corn are all great). Thin out some leftover gravy with chicken stock and pour over the first two layers. Top with a final layer of stuffing and pour over a little more chicken stock to keep it from drying out. Bake at 400° F for 25 minutes or until heated through. Serve with cranberry sauce and enjoy your now-empty fridge.
